Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz. cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup red pepper hot sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded Monterey Jack cheese
  • 1 cup roasted corn kernels, canned and drained or frozen and thawed
  • 1/2 cup crumbled cotija cheese, plus more for garnish
  • 1 tablespoon lime juice
  • 1 teaspoon chile-lime seasoning
  • 1/2 cup shredded cheddar cheese
  • Chopped fresh cilantro, for garnish
  • Town House® Game Day Dippers, for serving

Directions

1. Preheat oven to 375°F. Lightly grease a 9x9-inch baking dish with cooking spray and set aside.

2. Beat together cream cheese, sour cream, hot sauce and ranch dressing until smooth.

3. Add shredded chicken, Monterey Jack, corn, cotija cheese, lime juice and chile-lime seasoning and mix until all ingredients are evenly distributed.

4. Transfer mixture to prepared baking dish in an even layer. Sprinkle with cheddar cheese and bake until cheese is melted and edges are bubbling, about 20-25 minutes.

5. Remove from oven and garnish with additional cotija cheese and cilantro. Serve with Town House® Game Day Dippers.
