Caramelized Onion & Bacon Jam Ricotta Dip
Ingredients
- 8 slices thick-cut bacon
- 1 medium yellow onion, finely chopped
- 2 tablespoons brown sugar
- 1 tablespoon maple syrup
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper, divided
- 1 cup whole milk ricotta cheese
- 2 tablespoons cream cheese, softened
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh chives, for garnish

Directions
1. Heat a large skillet over medium heat. Add bacon and cook, turning occasionally, until cooked through and crispy, about 5-6 minutes per side. Transfer bacon to a paper-towel-lined plate to drain.
2. To the same skillet, add onions and cook, stirring occasionally, until golden-brown and caramelized, about 10-15 minutes.
3. Add in brown sugar, maple syrup, balsamic vinegar, paprika and 1/4 teaspoon of pepper, and cook until thick and jammy, about 5 minutes. Remove mixture from heat and set aside to let cool completely.
4. Chop bacon and add to onion jam mixture, reserving 1-2 tablespoons of chopped bacon for garnish.
5. Combine ricotta, cream cheese, olive oil, garlic powder, salt and remaining pepper in the bowl of a food processor or blender. Whip together until smooth and fluffy, about 2-3 minutes.
6. Spread the whipped ricotta mixture into a shallow serving dish. Spoon cooled bacon jam over the top, swirling into ricotta. Garnish with reserved bacon and chives. Serve with Club® Original Crackers.
