- 8 oz cream cheese (softened)
- 4 tbsp butter (softened)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp nutmeg (optional)
- ¾ cup finely shredded carrot (squeeze out excess moisture)
- 2 tbsp crushed pineapple (drained well)
- ¼ cup chopped walnuts or pecans (optional)
- 2 tbsp raisins (optional)
- 1 box of Club® Minis Original Crackers
- A pinch of salt
Directions
1. Base: Beat cream cheese + butter until smooth and fluffy.
2. Cake flavor: Mix in powdered sugar, vanilla, cinnamon, nutmeg, and salt.
3. Fold in the carrot cake: Stir in shredded carrot and pineapple slowly, don’t add all at once.
4. Add textures: Fold in nuts and raisins.
5. Chill for 30 - 60 minutes. Enjoy!
