Cracker-Crusted Spring Quiche
This spring quiche recipe puts a fresh spin on a classic quiche recipe with a buttery crust made from crushed Club® Original Crackers. Filled with tender asparagus, spinach, goat cheese, and savory ham or bacon, it’s a bright, satisfying dish perfect for brunch, holidays, or any seasonal gathering.
Ingredients
- Club® Original Crackers
- 4 tablespoons unsalted butter, melted
- 1/2 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 cup chopped fresh spinach, packed
- 1 tablespoon olive oil
- 8 large eggs
- 1/4 cup heavy cream
- 2 ounces goat cheese, crumbled
- 1/4 cup cooked ham, cut into cubes, or crumbled cooked bacon
- 1 tablespoon chopped fresh chives
- 1/2 tablespoon chopped fresh parsley, plus more for garnish
- 1/4 teaspoon finely ground black pepper
Directions
1. Preheat oven to 350°F. Place Club® Original Crackers into the bowl of a food processor and pulse until they are finely crushed and uniform in size.
2. Combine 2 cups of crushed crackers and butter in a medium bowl. Press mixture into the bottom and up the sides of a lightly greased 9-inch tart pan. Bake crust until it is set and lightly golden, about 8 to 10 minutes. Remove from the oven and set aside.
3. In a large skillet, heat olive oil over medium heat. Saute asparagus for 2 to 3 minutes, until tender and light golden-brown. Add spinach and cook until just wilted, about 2-3 minutes. Remove from heat and arrange in an even layer in prepared crust.
4. In a large bowl, whisk together eggs and heavy cream, until smooth. Stir in goat cheese, ham, chives, parsley and pepper. Pour mixture over asparagus and spinach in crust.
5. Bake until the center is set and the top is golden-brown, about 40 to 45 minutes. Allow quiche to cool completely before slicing. Garnish with additional parsley, and serve.
