Green Goddess Chicken Salad Recipe

Ingredients
- 2 ripe avocados, pitted, peeled and diced
- 1/4 cup mayonnaise or plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley, plus more for serving
- 1 tablespoon chopped fresh chives, plus more for serving
- 1 tablespoon chopped fresh dill, plus more for serving
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked chicken, chopped or shredded
- 3 stalks celery, chopped

Directions
1. Combine 1 avocado, lemon juice, parsley, chives, dill, garlic, salt and pepper in a food processor or blender and puree until smooth, scraping down the sides, as necessary.
2. Transfer dressing mixture to a medium bowl. Add chicken, celery, remaining diced avocado and additional herbs, as desired, gently tossing to coat.
