Ingredients

  • For the Mocktail:
  • 1/2 cup sugar
  • 1/2 cup water
  • 3 sprigs fresh rosemary
  • 1/2 cup lemon juice, plus more wedges for garnish
  • 1/4 cup honey
  • 2 cups lemon seltzer
  • For the Dip:
  • 1 tablespoon chopped fresh rosemary, plus more for garnish
  • 1 tablespoon lemon juice
  • 2 tablespoons honey, plus more for garnish
  • 1 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • Club® Original Crackers

Directions

1. For mocktail: Combine sugar and water in small saucepan over medium heat, stirring until sugar is completely dissolved. Add rosemary and bring mixture to a simmer.

2., Remove from heat and let steep for about 10-15 minutes. Strain mixture using a fine mesh sieve and let cool.

3. Combine lemon juice, honey and 1/4 cup of rosemary simple syrup in large serving pitcher, stirring until honey is completely dissolved.

4. Just before serving, add lemon seltzer and stir gently to combine. Divide mixture evenly among serving glasses filled with ice. Garnish with lemon wedges and serve.

5. For dip: Combine feta and cream cheese in a food processor and pulse until smooth. Add honey, rosemary and lemon juice and blend until light and fluffy. Transfer dip to a serving bowl and garnish with additional rosemary and a drizzle of honey. Serve with Club® Original Crackers.
