Whipped Ricotta & Pesto Dip
This recipe for Whipped Ricotta & Pesto Dip combines creamy, soft cheese with fresh basil, zesty lemon juice, and toasted pine nuts for a delicious, fresh dip. When served with Club® Original Crackers, each fresh bite is sure to keep friends & family alike coming back for more.
Ingredients
- 1 package Club® Crackers
- For the Pesto:
- 1/2 cup fresh basil
- Juice and zest of 1 lemon
- 1 garlic clove
- 3 tablespoons toasted pine nuts
- 1/3 cup extra-virgin olive oil
- 1/3 cup grated parmesan cheese
- For the Ricotta:
- 1 (15-oz) container whole milk ricotta
- 1 tablespoon olive oil
- Salt and pepper, to taste
Directions
For the Pesto:
1. Combine all the ingredients in a food processor and pulse until combined. Taste for seasonings.
For the Ricotta:
1. Place the ricotta in a food processor and process until very smooth and fluffy, about 2 minutes. Add the olive oil and whip again for a minute or so. Season with salt and pepper, to taste.
1. Keep at room temperature until ready to serve (unless you’re making it in advance — keep it in the fridge and let it come to room temperature again before serving).
2. Spread the whipped ricotta in a shallow serving bowl. Use a piping bag to outline shape of four leaf clover on top of whipped ricotta, then fill in the outline with pesto, drizzle with olive oil, and serve with Club® Crackers!
